Pizza Express shares secret recipe for its iconic garlic dough balls

Pizza Express has released the recipe to make its famous dough balls, complete with garlic butter.

The top tier doughy delights won the hearts of the nation over the years and its safe to say we’ve all been missing them. 

You only need 8 ingredients to whip up the balls and you’ll be tucking in in no time.

Dough Ball Ingredients:

  • 150ml warm water
  • 1 tsp sugar
  • 15g fresh yeast (or 2 teaspoons of dry yeast)
  • 225g plain flour
  • 1.5 tsp salt
  • Extra Virgin Olive Oil

Garlic Butter Ingredients:

  • 10ml extra virgin olive oil  
  • 4 tsp butter
  • Half tsp of chopped garlic

Method:

  1. Preheat oven to 230°C
  2. Add sugar and crumble fresh yeast into the warm water. Let stand for 10-15minutes until froth develops on the surface.
  3. Sift the flour and salt into a large bowl, make a well in the middle and pour the yeast mixture in.
  4. Mix the ingredients together until they bind.
  5. Dust your surface with flour, throw down the dough and knead for 10 minutes or until smooth, silky and soft. Leave the dough to rest until soft to the touch. 
  6. Roll the dough in 1.2 long tubes and chop into 16 chunks. Place in an ovenproof pan and rest for another 30 minutes. 
  7. Bake for 6 minutes or until golden.
  8. While cooking, make the garlic butter by blending the oil and garlic into a paste and blending with the butter.
